First thing this morning we had to go to the hardware store and get the roofing sheets for the building. The carpenter told us to get 5 packets of tin; he is notorious for over buying so we only bought 4 packets. The guy we bought them from is just a few blocks away from the mission house. He will even sell them to us by the piece so there is no need to have extras taking up space.
When we got back to the mission house a couple ladies were waiting on us. One of them was the mother of 3 albino children. Today was market day so she caught a ride to Yendi to get the sunscreen. We gave her 10 bottles so she will not have to come back for a couple months. The other lady was the older woman that we buy bread from. She has torn down her old kiosk where she sells bread and she has moved in a metal container that she is in the process of putting a roof on and adding a cement floor. She came with an appeal for help. She is to the point of needing the floor and she wanted help with cement. We agreed to give her 3 bags of cement. Later this afternoon we went to town and bought the cement and delivered it to her shop. She was all smiles!
One of the elders from the Yo-na’s palace in Tamale came to the mission house to get a pair of reading glasses. He used to live in Yendi with the regent before the regent got the chieftaincy at Tamale. Red also needed a pair of reading glasses and one for his friend.
When Nazo got to work this morning he discovered that he had caught another rat. When we walked outside we could smell the hair being burnt off the rat. This is the third rat he has caught. He said it will make a fine stew.
What are you having for Thanksgiving? We don’t have access to a turkey or ham so we are having chicken and cornbread dressing. We can’t buy cornmeal so we had to grind our own. No buttermilk for the cornbread but I soured some boxed irradiated milk with vinegar. It makes a great substitute for buttermilk. We can’t get sweet potatoes or pumpkin but I experimented with making a ripe plantain pie. The filling was quite tasty. No Crisco for the pie crust so I used oil. We did not have any eggs for the pie but we had powdered egg whites which I mixed with the canned milk. We had nutmeg and cinnamon but no ground ginger; hopefully the fresh grated ginger will work well. We found a couple cans of green beans on one of our trips to Accra. Now mind you they are out of date but really who cares? They are green beans. No cream of mushroom soup but I had canned mushrooms so I browned flour and made my own. All in all we will have a nice feast!
This year is a little unusual for us. Normally at this time of the year we are up to our eyeballs with the seminar. Thanks to the Covid we had to put it off until next time we come in.

Wow! You had to really work hard and be creative for your Thanksgiving feast! I bet it was delicious though! Since Bill and I were still quarantined it was just us for our dinner too. We didn’t have that many dishes but I did have turkey and cornbread dressing. I also opened just one can of green beans…didn’t even check the date. As you said, it’s just green beans!
